Bouillabaisse

Marseille's bouillabaisse is more than just a fish soup - it's a religion! An explosion of flavours and a tradition that goes back centuries. The basic recipe consisted of boiling fish and dipping it in bread, but the recipe has evolved over the years, with many different variations.

CHEZ SAUVEUR, the best pizzeria in Marseille

Chez Sauveur is a historic institution in Marseille, particularly in the Noailles district. Founded in 1943 by Sicilian Sauveur Di Paola, it is the oldest pizzeria in the city. The place is most famous for its ‘moit’-moit' pizza, half with anchovies and half with Emmental cheese. This pizza is considered a monument to Marseille's culinary culture, although Sauveur Di Paola's real speciality was the escarole pizza, a slightly more unusual choice.

Aïoli, the emblematic dish of Provence

A simple yet flavoursome dish, based on a variety of seasonal fish and vegetables, served with a tangy mayonnaise. Aïoli, as its name suggests in Provençal, is made up of 2 main ingredients, olive oil and garlic, and can be eaten as a main course or as an aperitif on toasted croutons washed down with a rosé, red or white wine from the Alpilles region. You can usually find it as a dish of the day on Fridays in the following restaurants.

Homer Lobster, the world champion lobster sandwich, is in Marseille

While the tuna sandwich remains a classic in Marseilles, the lobster sandwich is now making its mark. With the opening of his Homer Lobster establishment on rue Paradis, Moïse Sfez, winner of the world lobster roll championship, is aiming to offer a new culinary experience. As a side dish, enjoy truffle crisps dipped in a homemade chive mayonnaise and caviar.
The *navettes de Marseille*, traditional boat-shaped biscuits, are neatly arranged in a basket. Their golden, slightly cracked texture reflects their perfect baking. Beside the basket, a bouquet of yellow flowers adds a bright, natural touch. These iconic biscuits are often associated with Candlemas and have a light orange blossom flavor, a typical characteristic of the Marseille recipe.

Les navettes

Shuttle biscuits are a traditional dry biscuit made in Marseille. This biscuit was created by Monsieur Aveyrous in 1781. It is eaten cold (like most dry biscuits). It's made from wheat flour, sugar, eggs and orange blossom water, which gives it all its flavour! There's only one place we can recommend. It's the oldest bakery in Marseille, founded by Monsieur Aveyrous, who invented the shuttle in 1781! Passed down from generation to generation, the secret of the authentic Four des Navettes recipe has remained the same for over two centuries.
